
Recipe Post: Garlic Mushroom and Mix Vegies Salad.
After that lazy, party maniac weekend, we all go through Monday blues and we all diligently wait for next weekend to come by. If you are someone like me who suffer to get back on track on weekdays then I know how it feels like a task. So here, to break your Monday Blues, I decided to share this amazing kind of healthy yet tasty recipe which is one of my favorites.
I am sure you will love this too. I cooked this on Saturday and immediately I thought to share it on my blog so it will help someone out there. It’s simple and easy and nothing too complicated.
Mushrooms are a great source of protein, fiber, and enzymes and have no cholesterol and are best for diabetic patients. It’s the best source of vitamin B and Vitamin D. They are healthy, however, one must be careful while collecting mushroom as there are varieties of mushrooms and some are poisonous. Button Mushroom or white mushroom as they are called are mostly used for cooking and have been used since ages. It is a good food to include in your weight loss diet.
Preparation time: 15 to 20 mins
Servings: 2 to 3 people.

Ingredients all that you will need are:
- Mushroom one packet: I get a packet from the grocery vendor so that goes enough for me, you can buy as per your needs.
- Baby Corn 4 to 5 (or as per your needs)
- Carrot 1 or half.
- Onion: 1 small onion cut into squares.
- Garlic Cloves: 7 to 8 pods finely chopped.
- Salt
- Pepper
- 1 tablespoon Red chili sauce
- Half tablespoon Soy Sauce
- Olive oil or Butter (whatever you prefer)
Chopping the vegies

Chop Mushroom into 4, baby corn halves and and finely chop the carrot.

Cut the onions into squares and finely chop the garlic cloves.

Preparation

In a non-stick pan heat one tablespoon of oil. You can even use butter if you are not on a strict diet or on a keto diet and can afford the calories. Had garlic and saute it…Are you like me who loves the smell of garlic in butter or oil? I love the aroma of garlic in oil/butter.

Saute Garlic for some time and then add Mushroom. Why Mushroom first? Because if your mushroom is not fresh (like mine) it usually tends to leave the water. So let the Mushroom leave the water and let the water dry out. Meanwhile, Mushrooms will also get cooked up and will get soft.

As soon as the water dries out, add onions, baby corn, and carrot and let them get cooked up and soften them up a bit. Add salt and grinded pepper, be easy on salt.
After some time add one to one and a half tablespoon of red chili sauce, grind pepper, and less than a half tablespoon of soy sauce. You can add sauces as per your taste and preferences.

I like my food a little spicy so I added a bit more of Red chili sauce.

You can top it up with any seasoning of your choice like I added red chili flakes at the end.
You can serve this salad as a side salad with nice grilled chicken/Paneer, soup or rice or have it with Roti. Whatever you prefer. You can also add your choice of vegetables.
